Bean and Veggi Burgers

Step 1 – Mince in Chopper and saute in olive oil
4 medium carrots
1 Red Bell Pepper
1 sm Package Bella Mushrooms
1 or 2 Jalepenos
3-4 Shallots
Saute until well blended then add 1/2 C white wine, cover and simmer until soft. Remove from heat and season with:
1 TBSP or more of Texas Gourmet
Salt – Pepper
2 tsp Onion Powder
2 tsp Garlic Powder
Step 2 – Flour Oatmeal in Chopper, whip eggs & drain beans
• Fill the chopper twice with oatmeal and spin util most of the oatmeal is a course flour and set aside. About 3 1/2 – 4 Cups
• Whip 4 eggs together – set aside
• Drain 3 cans Red Kidney Beans, 2 cans Pinto Beans and 1 can White Cannellini beans.
Step 3 – Food Processor
Start blending in batches – cooked veggies, whole box of baby spinach, and beans. Transfer batches to a large bowl and add oatmeal and eggs, and blend thoroughly after all batches have been processed. You can also add optional items like cilantro and green onions at this time. Refrigerate overnight. After refrigerating, make into patties or balls and freeze on a parchment covered cooking sheet. Bag in ziplock after frozen.
Step 4 – Cooking Options – Do not thaw, best if cooked frozen
Air Fryer or outdoor grill – spray foil with olive oil and brush with olive or grape seed oil. Air fry at 400 2-15 min each side
Meat(less) balls – Air Fry or oven in a pyrex greased with olive oil, brush balls with more oil and bake 350 for approx. 20 min turning half way through.
Must Haves!
This is a must have chopper. It is the only chopper I have found that will mince my vegatables and create a nice flour out of my oatmeal. If you want to try it, here is the link to Amazon to purchace.
Best seasoning...EVER! You can buy this in the store or on their website. I also use their garlic and onion powder in this recipe.
I use a large capacity Hamilton Beach food processor similar to this one. Mine is old and no longer available but I love it.
I prefer organic beans if I dont prepare dried beans. But, who has time to do that. These are Kroger brand organic beans.
Minced and sauted vegatables
Floured oatmeal. Optional flavor add I put in this batch – cilantro and green onions.
Rinse beans in a colander.
Mixed, refrigerated and ready to make burgers.
